Nourish Bowl

I love bowls for lunch & to make as a quick healthy meal during the day or even for dinner. This one is very simple & I use my tahini dressing to make it creamy & extra filling!

Ingredients you need:

1 sweet potato

Organic spinach

Kale

Pepper of choice

Carrots

Chickpeas

Quinoa

Spices you need:

Paprika

Cumin

Garlic powder

S+P

Tahini dressing:

Tahini

Honey or maple syrup

Lemon

Olive oil

Water

Method:

Preheat oven to 350 degrees, place the chickpeas, diced carrots, kale, sweet potato & peppers on a baking sheet cover in spice mix with olive oil. Then place in oven to roast for about 15 mins until golden. Meanwhile prepare the bowl with spinach, set aside. Make the quinoa as regular and place in bowl once cool. Start preparing your tahini dressing by mixing all ingredients until smooth. Once vegetables are done in the oven place them in the bowl & drizzle the tahini dressing on top, squeeze a bit more lemon on top & you are ready to dig in!
