Gluten-free pumpkin pancakes

These pumpkin pancakes are great for the fall! They are yummy, quick & delicious.

Ingredients:

1/2 gluten-free pats

1/3 cup pumkin puree

2 free- range eggs

1 tsp vanilla extract

1tbsp maple syrup

1tsp pumpkin spice

Coconut oil for pan

Method:

  1. Mix all ingredients in a blender until smooth

  2. Pre-heat a pan with coconut oil

  3. Place the pancake mix in equal portions until lightly brown, serve with maple syrup
