Winter Salad With Sweet Mustard Dressing

This is a very nourishing & filling vegan salad that I love in the winter!

Ingredients: (for 1 serving)

Organic salad mix

1/2 a sweet potatoes

1/2 a red onion

1/2 an avocado

1/4 cup of chickpeas

1 tsp papkrika

1 tbsp olive Oil

1 tsp garlic powder

Dressing:

1 tbsp djon mustard

1 tbsp olive oil

Lemon juice

1 tbsp maple syrup

1 tbsp honey

METHOD:

On a roasting dish, place the chickpeas, red onion & sweet potatoes. Cover them in the paprika, garlic powder & olive oil. Place in oven for 15 minutes on 350 degrees celcius.

In the meantime, place the salad mix in a salad bowl, cut the avocado. Then make the dressing by mixing all ingredients & stir well.

Once the vegetables are ready, place them on top of the salad mix, add the avocado & cover with dressing & enjoy!
