TOFU SUMMER BOWL WITH GINGER & PEANUT DRESSING

This bowl is so delicious & easy to make! I love this for lunch during the summer months, however — you can eat it any time during the year!

Ingredients:

Firm tofu

1/4 cup brown rice

1 /4 cup spinach

Half an avocado

2 stalks of green onion

Half a cucumber

Sesame seeds for topping

Tofu marinade:

1 Tbsp soy sauce

1 Tsp sesame oil

1 Tsp garlic powder

Dressing:

1 Tbsp peanut butter

1 Tsp sesame oil

1 Tsp olive oil

1 Tbsp warm water

1 Tsp honey

1 Tbsp grater fresh ginger

Lime juice

1 Tbsp soy sauce

Preheat the oven to 400 degrees, meanwhile marinate the tofu for amount 5 mins. Place it on a baking sheet on parchment paper, bake the tofu until nice & browned about 10-12 mins.

Prepare the dressing by combining all ingredients & mixing until smooth, then place the spinach, brown rice in a bowl. Slice the avocado & cucumber. Add to the bowl. Once the tofu is ready add on top, then add on top the green onion, sesame seeds & the dressing!
