CHOCOLATE CHIP COCONUT FLOUR COOKIES

These are all vegan cookies which are delicious & easy to make!

Ingredients:

1/4 cup coconut oil - room temperature

1/3 cup tahini or almond butter

2/3 cup coconut sugar

2 flax eggs - 2 tablespoon flax meal mixed with 5 tablespoons of water let sit for 5 mins until mixture thickens

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon salt

1/3 cup coconut flour

1/3 cup dark chocolate chips

Sea salt for sprinkling on top

Method:

  1. Preheat oven to 350 degrees F

  2. Mix together the flaxseed eggs, coconut oil, tahini or nut butter, coconut sugar, vanilla extract

  3. Once mixed add baking soda, salt & coconut flour

  4. Then add the chocolate chips, form into small balls and place on baking tray 1 inch apart from each other, then sprinkle salt on top

  5. Bake for about 10 minutes until golden and flattened
