Taco Salad With Cashew Dressing

Love this recipe & the creamy dressing makes it so delicious! For this recipe I used organic chicken breast, but if you want to make it vegan try it with chickpea/walnut pieces as your protein, see recipe below.

(I use mainly organic ingredients, I highly recommend it for anything that is bare with no skin)

Ingredients:

Organic romaine lettuce

Black beans

Avocado

Green Onion

Tomatos

Cucumber

Organic chicken breast

Cilantro

Jalapenos

Lime

Cashew dressing:

1/2 cup raw cashews

1 tbp spoon Olive oil

1 tsp cumin

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Half a lime

1 tbsp plant milk (I used unsweetened almond milk by Elmhurst)

1/2 a tbsp water

salt & pepper

Walnut & chickpea (protein)

If you want to keep it vegan, you can do walnut & chickpea pieces as your protein

1/2 cup walnuts

1/2 cup chickpeas

1 tsp cumin

1tsp paprika

Olive oil

Salt & pepper

Method:

In order to make the cashew dressing, soak the raw cashews in warm water for 30 mins then add to blender, blend with all other ingredients until smooth.

To make the walnut & chickpea protein, blend everything together in blender and serve over salad.
