ROASTED POTATO & CAULIFLOWER WITH ARUGULA TOPPED WITH HUMMUS DRESSING

This is a delicious recipe & very filling. It is great for lunch or dinner!

Ingredients:

1 potato

1 cup cauliflower

1/2 teaspoon paprika

salt & pepper

1 cup arugula

olive oil

Hummus dressing:

1 tablespoon hummus

half a lemon juice

olive oil

salt & pepper

Method:

Set the oven on 400 degrees, chop the potato & cauliflower. Place on baking sheet with parchment paper, drizzle with olive oil, paprika and salt & pepper. Roast until tender & browned about 15 mins.

Meanwhile make the hummus dressing, by mixing all ingredients together.

Once vegetables are roasted, place them in a bowl with arugula, drizzle the hummus dressing on top & enjoy!
